Corn flour
Use cornmeal for tortillas and flatbreads, breading, thickening sauces, and as a base for gluten-free baked goods.
Gluten-free basic flour mix:
Mix 1/3 cornmeal, 1/3 rice flour and 1/3 cornstarch. Add 2 teaspoons of carob gum or guar gum per 500g of flour mixture.
